	gently massaged with minimal amounts of 
	salt and then placed in our aging rooms. Our
	Curing Masters check the Prosciutti daily 
	in the traditional Italian manner handed 
	down from master to apprentice for centuries.	
	There is no substitue for this lengthy, 
	natural process.  The unique quality and
	flavor of Prosciutto Citterio cannot be 
	duplicated by forced aging or any additives.
	In fact, our Prosciutto is all natural.  No
	chemicals, no artificial ingredients are
