Bresaola Citterio is exceptionally lean and tender, with a gentle aroma and flavor. As a result, most connoisseurs prefer to enjoy Bresaola in its simplest form: very thinly sliced, slightly moistened with a few drops of olive oil and freshly squeezed lemon; a twist of the pepper mill, crusty bread, some wine - and life is good. Bresaola can replace Carpaccio (sliced raw beef) in another popular Italian appetizer. Thin slices of Bresaola are arranged on radicchio or curly endive with fresh tomatoes and figs plus pieces of Parmigiano. The dressing: olive oil, lemon and pepper or a mustard-laced vinaigrette. Thinly sliced and cut into strips, Bresaola adds intriguing tastes to cooked tagliolini(thin noodles) tossed with fresh arugula, cream and melted butter - then topped with generous gratings of cheese, either Parmigiano or aged Ricotta Salata. People with dietary concerns enjoy Bresaola because it is so lean and, even in small amounts, provides plenty of flavor satisfaction and nutritional value. |
